Step 1

Preheat the oven to 300°F. Tear 4 pieces of heavy duty foil about 5 inches longer than the racks of ribs. Set aside.

Step 2

Ensure that the membrane is removed from the bone side of the ribs. You can easily do this by using a knife to loosen it enough to be able to grab it. It’ll be slippery, so use a paper towel to secure it and then pull it off and discard.

2 racks Baby back ribs

Step 3

Add all of the spices and mustard to a small bowl and mix until evenly combined. Slather both racks of ribs with the spice mustard mixture.

1/4 cup Yellow mustard

2 tsp Kosher salt

1/2 tsp Freshly ground black pepper

1 tbsp Brown sugar

1 tsp Cajun seasoning

1 tsp Smoked paprika

1 tsp Onion powder

1 tsp Garlic powder

Step 4

Place one rack of ribs on one piece of foil. Place 3 tablespoons of butter on top of the rack and drizzle with 3 tablespoons of apple juice. Take another piece of foil and place it on top of the rack of ribs. Crimp all the edges tightly to completely wrap the ribs and ensure they are sealed. Repeat the process with the other rack.

6 tbsp Unsalted butter

6 tbsp Apple juice

Step 5

Place the wrapped ribs on a rimmed baking sheet. Transfer the pan to the oven to bake until the ribs are very tender, 2½ to 3 hours.

Step 6

Remove the pan from the oven and turn the heat up to 450 degrees F.

Step 7

Carefully open the foil packs (there will be hot steam trapped inside, so use caution when opening). Use a silicone brush to coat the meat in BBQ sauce and return to the oven uncovered until the sauce is thick and bubbly, about 20 minutes.

3/4 cup Bbq sauce

Step 8

Remove from the oven and let sit for 5 to 10 minutes. Slice into half racks or individual ribs and serve with BBQ sauce on the side if desired.
