Meatloaf Shepherd’s Pie

I know a lot of people could use a little extra comfort right now, so I wanted to share one of my favorite comfort dishes. This meatloaf shepherd’s pie won’t fix everything, but a warm, hearty meal can help in its own small way.

Method

Turn cooking mode on

Step 1

Place the bacon slices on a baking sheet and bake at 400°F until crispy to your liking. Remove from the oven and crumble into bacon bits. Set aside.

6-7 slices Bacon

Step 2

In a large mixing bowl, add the ground chuck, Italian sausage, chopped onion, minced garlic, milk, eggs, pecorino romano, Italian breadcrumbs, parsley, beefy onion soup mix, Worcestershire sauce, garlic powder, cracked black pepper, and salt. Mix just until combined—do not overmix.

2 lb Ground chuck

1 lb Italian sausage

1 small White onion

1 heaping tbsp Minced garlic

1/2 cup Milk

2 Eggs

1/2 cup Pecorino romano

1 cup Italian breadcrumbs

1/4 cup Fresh parsley

1 envelope Lipton Beefy Onion Soup Mix

2 tbsp Worcestershire sauce

1 tsp Garlic powder

1 tsp Cracked black pepper

1/2 tsp Salt

Step 3

Microwave the mashed potatoes according to package directions. Set aside.

32 oz Bob Evans family-size mashed potatoes

Step 4

Grease a 9×13 baking dish with cooking spray. Add the meatloaf mixture and press it evenly into the dish.

Step 5

Sprinkle 1 cup shredded cheddar cheese evenly over the meat layer. Spoon dollops of mashed potatoes over the cheese and gently spread into an even layer.

2 cups Shredded cheddar cheese

Step 6

Top with the remaining 1 cup shredded cheddar cheese, then sprinkle evenly with green onions and crispy bacon bits (if using).

4-5 stalks Green onions

Step 7

Bake at 375°F for 35–40 minutes, until heated through and bubbly. Let rest for a few minutes before slicing. Enjoy!
