Baked Potato Potato Salad

Memorial Day cookout just got a whole lot better 🇺🇸✨ This Baked Potato Potato Salad is loaded with crispy bacon, cheddar cheese, green onions, and the creamiest ranch dressing mix for the ultimate side dish everyone will be going back for seconds...and thirds!!

Ingredients

Method

Turn cooking mode on

Step 1

Boil potatoes in salted water until just fork tender. Drain.

10 medium Red potatoes

Step 2

Place kitchen towel over potatoes in colander and let steam for 15 minutes.

Step 3

Mix sour cream, mayonnaise, ranch seasoning, and bacon grease.

2 cup Sour cream

2 cup Mayonnaise

1 tbsp Dry ranch seasoning

9 pieces Bacon

Step 4

Remove towel.

Step 5

Add mayonnaise sour cream mixture to potatoes then add chopped bacon, cheese, and green onions. Toss gently.

2 cup Shredded cheddar cheese

4 Green onions

Step 6

Adjust salt and pepper to taste.

Step 7

Chill in refrigerator for at least 2 hours before serving.
