Meal Plan 1

Let’s kick off the first meal plan with two of my favorites: a fresh, flavorful salmon and the kind of pulled pork that keeps on giving. We’ll cook big once, then spin it off into easy, delicious meals that carry you through the week without ever feeling like leftovers.

The recipes

Baked Salmon

Y’all, this one is as easy as it is delicious. A handful of pantry staples, a quick whisk, and before you know it, dinner’s in the oven and your kitchen smells heavenly. Perfect for a weeknight when you want something light, flavorful, and fancy without the fuss.

Crispy Salmon Cakes

A little leftover salmon goes a long way, y’all. These salmon cakes are crisp on the outside, tender on the inside, and the perfect way to stretch one meal into another. Pair them with a simple salad, and you’ve got yourself a light, delicious supper.

Pork Shoulder Roast

This Pork Shoulder Roast is the ultimate kick-off to Set You Up Sundays. It’s the kind of recipe you make once at the beginning of the week and then thank yourself for over and over again. Slow-braised with smoky chiles, warm spices, and a splash of dark beer, the pork comes out tender, juicy, and packed with flavor. Serve it straight from the pot for Sunday supper, then carry it through the week—tucked into tacos, piled over coconut rice and beans, or layered onto sandwiches. One roast, endless possibilities, and meals that practically take care of themselves.

Pulled Pork Street Tacos with Green Crema

If there’s one thing I’ll never say no to, it’s tacos—especially when they’re piled high with tender pulled pork and finished with a cool, tangy green crema. These Pulled Pork Street Tacos are the perfect way to use up leftover pork shoulder (or to give your weeknight a little fiesta flair). The creamy avocado-lime sauce takes just minutes to blend and brings the whole dish together in a way that feels fresh, bright, and downright irresistible.

Coconut Rice & Beans for Pork

When I want something comforting but still a little unexpected, this Coconut Rice & Beans is my go-to. The coconut milk makes the rice rich and creamy, while the nutmeg adds just the right warmth. Toss in black beans and finish it off with citrusy pulled pork, and you’ve got a dish that feels both homey and special. It’s a side that easily becomes the star of the plate.

Daddy’s Pocket Knife Slaw

Every Southern girl thinks her daddy is the most intelligent, funniest, most talented, and most special. I am no exception. There is hardly anything my daddy can’t do, and to top it all off he is an amazing cook. Our friends are always clamoring for him to make this slaw when we have a get-together. I know exactly what you are thinking, slaw? Who gives a damn about slaw! Slaw is just an afterthought. Well, not his! It’s quite spectacular—just ask the man himself! The cabbage doesn’t have to be cut perfectly—you could even use a pocket knife if that is all you have! And let me tell you, it just so happens to be the perfect side to my pork shoulder roast—the crisp, tangy bite balances out the rich, smoky meat every single time.
